I am doing an extension activity for my Primary Reading class in college. Can someone give me a good definition for what an extension activity is and any thing I should consider when planning one?

An extension activity is anything that extends the learning that took place in the lesson. When planning extension activities, I usually have 1 activity for my advanced students who need a challenge and for my strugglers, I have an activity reinforces the skill.
