How would you go about saying

"The cheapest seats (opera house seats) cost only nine dollars and the most expensive seats cost a hundred and ten dollars"

I think the most is like.. le plus cher sieges or would it be les plus cher sieges b/c it has to agree with seats?

You should say "place", not siège. Siège is the chair.

Les places les moins chères (les places d'opéra) co?tent seulement neuf dollars, et les places les plus chères co?tent cent dix dollars.

So, you have to use plural, because there are several seats... Beware of the words' order...
