Theatre shows in London?
The Lion King is what you would expect from Disney, a spectacular show with great staging and costumes. I went to this last weekend with a friend who loved the dvd but this was the first time she had seen the live musical - she was open mouthed at the production. In fact she came out saying she was expecting to enjoy it but it had blown her expectations by how good it was.
Can't comment personally on we will rock you as I haven't seen it but I have heard lots of positive comments about it being a high energy show.
Phantom is a classic, very different in musical style to the shows already mentioned. The tunes are pretty well known though so I guess you know that - depends what you and the family enjoy.
Les Mis is another classic, there are some fantastic tunes in the show and being based on a classic novel has a plot with substance in.
In contrast if you want light hearted fun I'd also suggest Mamma Mia. The plot certainly would not compair to the likes of Les Mis but if you don't expect than that's ok. Based on the music of Abba the audience is often up and dancing at the end.
I don't know what your families taste are so its hard to predict. As a general rule if kids haven't had much experience of theatre I would recommend a more fun and energetic show rather than something more serious. I personally think thats a good introduction but each kid & adult has their individual taste so if its a family enjoyable night out try and match as closely to all of you as poss.
